Roasted Beet Dip with Sweet Onion Chips

Ingredients:

  • 4 medium beets
  • 1/3 cup toasted walnuts
  • 4 teaspoons red wine vinegar
  • 1 teaspoon pure maple syrup 
  • 1/3 cup extra virgin olive oil plus more to garnish
  • 1/2 teaspoon fine sea salt
  • 1 cup whole milk yogurt
  • Hal’s Sweet Onion Chips for dipping

Instructions:

  1. Rinse and scrub the beets and slice off the tops. Place them on a foil lined sheet pan. Cover tightly with more foil and roast at 400 degrees for 45 minutes or util fork tender. When done, run the beets under cool water and rub the skins off with your fingers. Chop the beets and set aside.
  2. Add the roasted beets, walnuts, vinegar, maple syrup, fresh dill, salt and pepper to a food processor. mix to combine. With the food processor running, drizzle in the olive oil and blend to a smooth paste. Add in 3/4 cup yogurt and mix until smooth and creamy. Transfer to a serving bowl.
  3. Fold in the remaining 1/4 cup yogurt, being careful not to mix all the way to get the streaks of white. Drizzle on a bit more olive oil and garnish with fresh dill. Serve with Hal’s Sweet Onion Chips and enjoy!
